Cotton - wool cake
It's nearly Chinese New Year, I have a cotton-wool cake recipe that I love to do at this time of the year. It's easy and full of meaning. This recipe's a young coconut cotton- wool cake but I dont have a coconut, so we use water instead of coconut juice.
Cotton wool cake recipe
200g cake flour.
1 teaspoon baking soda.
2 eggs
100 ml water (coconut juice)
180 g sugar
10 g SP
50 g Evaporated milk
1 teaspoon lemon juice
1/2 teaspoon coconut extract
How to
1. sift flour and baking soda
2. Whisk eggs + water + SP with medium speed, gradually add sugar whisk high speen about 5 minutes or ultil white and smooth.
3. add Evaporated milk + lemon juice + coconut extract, continue with medium speed for 5 mins.
4. add flour, whish with low speed.
5. leave batter set for 30 minutes, seperate and color with prefered.
6. scoop into cups, steam over boiled water for 15 minutes
7. be careful when open a steam pot, water drops will make batter color pale
