I'm a big fan of Suan Dusit's Caramel Toffee Cake. I first taste it when I went to see my friend who studied there. The was warm just like it just out from oven. the cake was so soft, salted caramel was so good. a touching combination . After that, every time I found this cake, I can't stop myself buying it.
(Sponge) Caramel Toffee cake Recipe by Triny@pantip
125 g Cake flour (พัดโบก)
2 table spoon coffee
2 table spoon Cocoa powder
200g Sugar
2 teaspoon Baking soda
150g Butter
4 Eggs
1/8 teaspoon salt
Caramel Toffee topping
150g Butter
60 g Evaporated milk
140 g Sugar
1/4 teaspoon Salt
170 g Cashew nuts (baked)
1 teaspoon Coffee
3.5 table spoon Cake Flour
1. Prepare cake batter, cake flour, cocoa powder, baking soda, grounded sugar, coffee, eggs and butter
2. mash instant coffee to be easier when sift with flour
3. melt butter in microwave
4. sift flour, cocoa powder coffee together 3 times
5. prepare 10x10 tray, cover with waxed sheet paper.
6. preheat oven at 175 C, then beat eggs at low speed, add salt, change to high speed, add sugar a spoon at a time.
7. eggs and sugar will turn to have big bubbles after 5 minutes
9. continue whisk for 10 mins
10. sift flour again to the bowl
11. whisk at low speed, slowly pour melted butter while whisking
13. pour batter to tray, bake 30 mins, leave to cool on a rack
14. after cake's cool, make caramel toffee by adding butter, milk, sugar salt in to a pot. put on medium heat, stir fine
15. add coffee
16. add flour
17. add cashew nuts, turn off fire, leave to cool
18. put the pot in water to make it cool faster
19. top over cake
20. bake top heat at 200C 10-15 mins until caramel dry up
21. leave to cool
22. turn cake upside down , get rid of waxed paper
23. cut
and we've ready for Caramel Toffee Cake!!!!
Thank you so much for the good recipe. I do love Saun Dusit Toffee Cake too but have no idea how to bake this. Will try it some time soon.
